Yuca, the root of life, was a Mayan treasure, sustaining them through thick and thin. One day, a resourceful cook, inspired by the robust flavors of garlic, created a simple yet delicious dish - Yuca with Garlic Sauce. This humble meal, often shared during community gatherings, was a testament to the Mayan's deep respect for the earth’s nourishment.

Ingredients:

  • 2 large yuca roots, peeled and cut into chunks
  • 3 tbsp olive oil
  • 4 cloves garlic, finely chopped
  • Juice of 1 lime
  • 1 small onion, finely chopped
  • Salt to taste
Instructions:
  1. Boil yuca chunks in salted water until fork-tender, about 20-30 minutes, then drain and let cool.
  2. In a skillet, heat olive oil and sauté garlic and onion until they turn golden and fragrant.
  3. Pour the garlic and onion mixture over the cooked yuca.
  4. Add a splash of lime juice and toss everything together until well coated.
  5. Serve warm as a side dish.
Healing Properties: Yuca is rich in vitamin C and carbohydrates for energy. Garlic boosts immunity and has antibacterial properties.
