Ingredients:

  • 1 cup millet
  • 2 cups water or vegetable broth
  • 2-3 cardamom pods
  • 1 cup chopped vegetables (like bell pepper, cucumber, and cherry tomatoes)
  • 1/4 cup chopped fresh herbs (like parsley and cilantro)
  • Salt and pepper to taste

Instructions:

  1. Rinse the millet under cold water.
  2. In a pot, combine the millet, water (or broth), and slightly cracked cardamom pods.
  3. Bring to a boil, then reduce heat to low, cover, and let simmer for 20-25 minutes, or until millet is cooked and fluffy.
  4. Let the millet cool, then mix in the chopped vegetables and herbs.
  5. Season with salt and pepper to taste.
  6. Remove the cardamom pods before serving.
  7. Serve chilled or at room temperature.
